In the summer, everyone melts for frosty desserts! To blend good flavour and good health, choose 100% fruit sorbets and ice pops with “no sugar added,” or reduced-fat frozen yogurt and ice milk, and opt for small 125 mL (½ cup) servings. Refreshment guaranteed! Here are a few ideas for preparing iced desserts packed with vitamins!
Refreshing Popsicles
The Rocket-Pop. Prepare three fruit purees: strawberries or raspberries for the red section, pears for the white section, and blueberries for the blue section. Fill popsicle moulds one-third of the way with the red puree, then add one-third of the white puree and top with a final one-third of the blue puree. Insert popsicle sticks and freeze until solid.
You can also prepare this recipe with 100% fruit juices with no added sugar. Use red cranberry juice, white cranberry or white grape juice and purple grape juice. To keep them from mixing, simply freeze each section one at a time.
The Swirl-Pop. Fill popsicle moulds halfway with the yogurt of your choice. Puree your favourite fruits and, without mixing, pour over the yogurt. Gently stir with a stick in a circular pattern (about 5 turns) so the 2 sections make a spiral. Insert sticks and freeze.
Fruit Terrines
Terrine with Pieces of Fruit. Cover a square mould with plastic wrap and place in the freezer for 30 min. Meantime, remove some frozen yogurt from the freezer to soften a bit. Transfer to a bowl. Add blueberries, raspberries or little pieces of fruit and gently hand mix. Press the mixture into the cold square mould and place in the freezer for about 1 hour. Serve in slices. You can also make an iced fruit dome using a round bowl instead of a square mould.
Half-n-Half Terrine. Cover a square or rectangular mould with plastic wrap. Fill halfway with slightly softened frozen yogurt, smooth the top and cover with plastic wrap. Place in the freezer for about 1 hour until firm. Remove plastic wrap. Spread an even amount of softened sorbet over the frozen yogurt and smooth the top. Cover with plastic wrap and freeze for 1 hour. When ready to serve, remove the plastic wrap, slice and serve with a fruit coulis, chopped nuts and black chocolate shavings.
Gourmet Sandwiches
Top store-bought or homemade cookies, small meringues or crispy slices of French toast with sorbet, yogurt or ice milk and add a few fruit toppings.
Iced Batons. Slice ladyfingers lengthwise and top one half with thinly sliced strawberries, fresh mint leaves and mini scoops of vanilla frozen yogurt (using a melon baller). Cover with the other half of the ladyfinger and serve immediately.
