Fruits and vegetables on the barbecue

The sweet smell of the barbecue announces summer’s arrival. And not only does the barbecue give you mouth-watering fare; it allows you to cook with no or little added fat. To make the most of this cooking method, don’t limit it to lean meats, poultry and fish. Grilling enhances the flavour of vegetables—and even fruits! In other words, it offers the perfect opportunity to put Mother Nature’s healthy, colourful and flavourful bounty on the menu!

En papillote

This is the healthiest method for the barbecue:  the food does not come into contact with the flame, and you don’t need to add fat. Place tomato wedges, mushrooms, corn kernels and zucchini slices on a square of aluminum foil. Sprinkle with oregano. Fold foil tightly shut and cook for about 15 minutes. The blend of flavours is unbeatable! 

This cooking method can also be used for berries. Place strawberries or blueberries on a square of aluminum foil and drizzle maple syrup over top. Fold foil shut and heat over the grill for a few minutes. Tasty on frozen yogurt!

On the grill

Eggplant, tomatoes, zucchini, carrots, sweet peppers, onions, fennel . . . A wide variety of vegetables can be cooked directly on the grill. Cut vegetables into large chunks or thick slices and brush lightly with oil. Place on the grill over medium-high heat for about 10 minutes (cooking time will vary depending on size of pieces), turning often.

Brochettes

Brochettes are classic barbecue fare. Everyone is familiar with appetizing vegetable brochettes, made by alternating chunks of sweet pepper, onion and mushrooms. 

This year, wow your guests with fruit brochettes for dessert. Marinate chunks of fruit (such as pineapple, cantaloupe, kiwi and strawberries) for at least 2 hours in a blend of orange juice, honey and chopped fresh mint. Thread fruit chunks onto skewers, and grill over medium heat for a few minutes. Watch them closely, since the honey speeds up the cooking. Delicious with a sauce made from plain yogurt, orange juice and honey.
